Grilled Salmon Mango & Lime

Method

  • 2tbsp lime juice

  • 1tbsp runny honey

  • 2tbsp chopped dill

  • 4 x 115g salmon fillets

  • Salt and pepper

  • New potatoes, cooked to serve (optional)

  • Salad leaves, to serve

1. Preheat the grill to medium - high. Line the grill rack with foil.

2. Put the lime juice, honey and half the dill in a wide bowl and mix well. Season to taste with salt and pepper. Add the salmon and turn to coat in the glaze. Arrange the salmon on the grill rack, then grill, turning once for 8 - 10 minutes, until browned and the fish flakes easily when pressed with a fork.

 

 

Mango & Lime Salsa...

3. Meanwhile, to make the salsa, put the mango, lime zest & juice and remaining dill in a small bowl and mix well.

  • 1 mango, stoned, peeled and cut into cubes

  • Finely grated zest & juice of lime

4. Serve the salmon, topped with the salsa, with the new potatoes if using, and salad leaves.
